Ingredients
  

  • 1 cup fresh parsley chopped
  • 3 garlic cloves minced
  • 2 tbsp lemon juice

  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups canned chickpeas rinsed and drained
  • 1/3 cup nut meal or oat flour
  • 2 tbsp olive oil plus more for frying
  • Pita bread or buns for serving
  • Toppings: lettuce tomatoes, tahini sauce, pickles

Instructions
 

  • Prepare the Chickpea Mixture: In a food processor, combine parsley, garlic, lemon juice, cumin, salt, and pepper. Blend until finely chopped. Add the chickpeas to the food processor and pulse until the mixture becomes chunky yet holds together cohesively. Transfer the mixture to a mixing bowl and stir in the nut meal or oat flour. Mix thoroughly until a dough forms.
  • Shape the Patties: Divide the dough into four equal portions and shape them into patties, approximately 1/2 inch thick. Transfer the patties to a plate and refrigerate for at least 15 minutes to allow them to firm up.
  • Cook the Patties: Warm 2 tablespoons of olive oil in a non-stick skillet over medium-high heat. Cook the patties for 3–4 minutes on each side, or until they are golden brown and crisp. Alternatively, bake the patties in a preheated oven at 375°F (190°C) for 30–40 minutes, flipping them halfway through to ensure even cooking.
  • Assemble the Burgers: Place the cooked patties on your choice of bread or buns. Add toppings like lettuce, sliced tomatoes, tahini sauce, and pickles.
  • Serve immediately and enjoy!

Notes

To ensure even cooking, leave enough space between the patties and avoid overcrowding the skillet.
Keep leftover patties in an airtight container and store them in the refrigerator for up to 3 days.
