Homemade Hamburger Recipe: How to Make Perfectly Juicy Burgers

Ingredients
  

Patties:

  • 1 ½ pounds 680g beef mince (ground beef)
  • ½ cup breadcrumbs
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • Salt and pepper to taste
  • 1 tablespoon olive oil for frying

Toppings:

  • 4 –6 brioche buns
  • Cheese slices optional
  • Tomato slices
  • Red onion slices
  • Gherkins pickles, sliced
  • Lettuce
  • Whole-egg mayonnaise
  • Ketchup
  • American mustard

Instructions
 

  • Prepare the Patty Mixture: In a large bowl, combine the beef mince, breadcrumbs, egg, Worcestershire sauce, ketchup, salt, and pepper. Mix everything together using your hands until well combined.
  • 2 – Shape the Patties: Divide the mixture into 4–6 equal portions. Shape each portion into a patty slightly larger than the size of your buns, as the patties will shrink a bit during cooking. Use your thumb to make a small indent in the center of each patty to help maintain their shape while cooking.
  • 3 – Cook the Patties: Heat the olive oil in a heavy-based frying pan over medium-high heat. Cook the patties for 10–12 minutes, turning halfway through. Add a splash of water during the last 2 minutes to help deglaze the pan and coat the patties in the flavorful bits that form at the bottom. Alternatively, you can cook the patties on a chargrill pan or barbecue plate. Preheat the grill to medium-high, spray with oil just before cooking, and grill for 10–12 minutes, turning halfway through.
  • 4 – Assemble the Burgers: Toast the brioche buns if desired. Top the bottom halves of the buns with the cooked burger patties. Add cheese (optional), then layer with tomato, red onion, gherkins, lettuce, mayonnaise, ketchup, and American mustard.
  • 5 – Serve: Close the buns with the top halves and serve immediately with your favorite sides. Enjoy!
