Ingredients
  

  • 1 medium shallot finely chopped (about ¼ cup)
  • ½ small bunch fresh parsley leaves finely chopped (about ¼ cup)
  • cup panko breadcrumbs
  • ¼ cup plain Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 4 hamburger buns
  • 4 slices of cheese optional

Instructions
 

  • Prepare the Mixture: In a medium bowl, combine the chopped shallot, parsley, panko breadcrumbs, Greek yogurt, Dijon mustard, Worcestershire sauce, kosher salt, and black pepper. Stir until well mixed.
  • Incorporate the Turkey: Add the ground turkey to the bowl and mix gently until just combined. Avoid overmixing, as this can make the burgers dense.
  • Shape the Patties: Divide the turkey mixture into 4 equal portions (about 5 ounces each). Use your hands to gently shape each portion into a patty about ½-inch thick and 3½ inches wide. Press your thumb lightly into the center of each patty to create a small dimple. This helps the burgers cook evenly and prevents bulging in the center.
  • Cook the Burgers: Heat the olive oil in a large cast iron skillet or nonstick pan over medium heat until shimmering. Working in batches if necessary to avoid overcrowding, add the patties to the pan. Cook undisturbed for about 6 minutes, or until a golden-brown crust forms on the bottom.
  • Flip and Finish: Flip the patties using a thin, flat spatula. If you like, add a slice of cheese on top of each patty. Cook for an additional 5-6 minutes, or until an instant-read thermometer inserted into the center of each patty registers at least 160°F.
  • Assemble the Burgers: Place each patty on a hamburger bun. Add your preferred toppings and condiments.
